Indulgent gluten-free cherry muffins with a delicious buttery oat topping for a cobbler-inspired treat that proves eating gluten-free can be just as decadent!
Ingredients:
  • 2 cups gluten-free all-purpose baking flour
  • 1 teaspoon gluten-free baking powder
  • 0.25 cup vegetable oil
  • 0.5 teaspoon almond extract
  • 2 cups pitted and chopped fresh cherries (including any juice from chopping)
  • 0.25 cup gluten-free rolled oats
  • 0.25 cup brown sugar
  • 0.25 cup white sugar
  • 2 tablespoons cold butter, cut into pieces
Instructions:
  • Preheat the oven to a toasty 375 degrees F (190 degrees C) and outfit 24 muffin cups with paper liners.
  • In a large bowl, combine flour, 1/2 cup sugar, and baking powder. In a separate bowl, whisk together milk, vegetable oil, egg, vanilla extract, and almond extract. Create a well in the center of the flour mixture and pour in the milk mixture. Stir until just blended and slightly lumpy, then gently fold in cherries and cherry juice. Fill muffin cups 2/3 full with batter.
  • Combine oats, brown sugar, 1/4 cup white sugar, and butter in a bowl until a crumbly texture forms; sprinkle over batter.
  • Bake until a toothpick inserted in the center comes out clean, about 20 minutes in the preheated oven.
