Tangy citrus-infused sweet cherry skillet cobbler, gluten-free and vegan, perfect for a romantic Valentine's Day treat.
Ingredients:
  • 1 pound frozen pitted dark sweet cherries, thawed
  • 1 large blood orange, juiced
  • 1 teaspoon grated orange zest
  • 1 cup gluten-free flour
  • 0.75 cup almond milk
  • 0.25 cup vegan butter, melted
  • 1 tablespoon baking powder
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • In a stockpot, gently simmer cherries, sugar, orange juice, orange zest, and salt for 10 minutes. Pour the mixture into a 10-inch cast iron skillet.
  • Combine flour, sugar, almond milk, melted butter, baking powder, and salt in a bowl until fully incorporated. Spoon over the cherries in the skillet.
  • Simply bake until the top is golden brown, for about 35 to 45 minutes, then serve immediately.
