Try this delicious no-bake heirloom cookie recipe for a fruity holiday treat everyone will love.
Ingredients:
  • 1 cup butter
  • 1 cup firmly packed brown sugar
  • 1 (8 ounce) package chopped pitted dates
  • 1 egg, beaten
  • 3 cups crispy rice cereal
  • 1 cup chopped coconut
  • 0.5 cup chopped drained maraschino cherries
  • 2.5 cups flaked coconut
Instructions:
  • In a 10-inch skillet over medium heat, melt butter. Stir in sugar and dates until the sugar dissolves, about 1 to 2 minutes.
  • Take the skillet off the heat, add the egg, and briskly stir to keep it from cooking.
  • Place the skillet back on medium heat and stir constantly until the mixture comes to a full boil, about 4 to 6 minutes. Continue cooking at a boil, stirring constantly, for an additional minute.
  • Take the skillet off the heat, then mix rice cereal, chopped coconut, chopped cherries, and vanilla extract with the dates. Allow the mixture to cool and firm up for about 10 minutes.
  • Roll rounded teaspoonfuls of the mixture into 1-inch balls, then coat them by rolling in flaked coconut spread in a wide, shallow dish.
