Cheesy tomato tart - a stunning addition to any meal.
Ingredients:
  • 1 recipe pastry for a 9-inch pie crust
  • 1 tablespoon olive oil, or as needed
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 1 cup shredded Gouda cheese
  • 0.5 cup chopped fresh basil
  • 0.33333334326744 cup mayonnaise
  • 0.25 cup shredded sharp Cheddar cheese
  • 0.25 cup freshly grated Parmesan cheese
  • 1 tablespoon Dijon mustard
  • 1 tablespoon chopped fresh oregano
  • 0.25 teaspoon freshly ground black pepper, or to taste
  • 1 pinch ground nutmeg
  • 1 pinch salt, or to taste
  • 4 cups cherry tomatoes
Instructions:
  • Roll out the pie dough on a lightly floured surface into a 12-inch circle. Carefully transfer the dough to a 9-inch tart pan with a removable bottom and press it snugly to fit. Trim any excess dough to leave a 1/2-inch overhang and fold the edges under to create a slight lip over the top of the pan on all sides.
  • Poke the bottom of the crust with a fork multiple times, being careful not to go all the way through. Chill the crust in the freezer until fully cold, for at least 30 minutes.
  • Meanwhile, in a medium skillet over medium heat, heat olive oil and cook onion and garlic until golden brown, stirring often, for about 10 minutes. Remove from heat and let cool to room temperature.
  • Combine Gouda, basil, mayonnaise, Cheddar, Parmesan, Dijon mustard, oregano, pepper, nutmeg, and salt in a medium bowl. Fold in the cooled onion and garlic until well mixed.
  • Preheat the oven to 350°F (175°C).
  • Take the tart pan out of the freezer. Evenly spread the cheese mixture at the bottom. Arrange cherry tomatoes evenly on top and gently press down. Transfer the tart to a large baking sheet.
  • Bake in the preheated oven for 55 to 65 minutes until the crust is golden brown, cheeses are bubbly, and most of the tomatoes have burst. Let cool for 20 minutes, then carefully transfer the tart to a serving platter. Serve warm.
