Cheese, ham and cherry tomato tart

Elevate ham, cheese, and tomato with a flaky pastry for a gourmet meal in minutes.
Ingredients:
  • 2 sheets (25 x 25cm) frozen shortcrust pastry, just thawed
  • 2 eggs
  • 115g (1 1/3 cups) coarsely grated cheddar
  • 85g (3/4 cup) coarsely grated swiss cheese
  • 3 slices English Ham, cut into 1cm-thick strips
  • 10 cherry tomatoes, halved
  • 30g feta, crumbled
  • Fresh lemon thyme, to serve
Instructions:
  • Preheat the oven to 220°C and line a baking tray with non-stick baking paper. Cut one pastry sheet into 8 strips. Place one pastry sheet on the tray. Layer two pastry strips along the edge to form a border and repeat with the remaining strips. Trim any excess pastry at the corners and pinch the edges for a decorative touch.
  • Combine sour cream and 1 egg in a bowl, season with salt and pepper. Mix in cheddar and Swiss cheese. Spread cheese mixture over pastry, leaving a 2cm border. Arrange ham in a diamond pattern, place 1 tomato half in the center of each diamond, and top with feta.
  • Beat the last egg in a small bowl. Gently coat the edges of the pastry with the egg wash. Bake for 20 minutes or until beautifully golden. Garnish with fragrant lemon thyme before serving.
