Savory muffins, perfect for quick and tasty after-school snacking.
Ingredients:
  • 90g shaved ham, chopped
  • 165.00 ml cheddar cheese, grated
  • 112.50 gm self-raising flour
  • 6 cherry tomatoes, halved
  • 20.00 ml flat-leaf parsley, chopped
  • 84.98 gm milk
  • 1 egg, lightly beaten
  • salt and pepper
Instructions:
  • Preheat your oven to a piping hot 200°C.
  • In a large bowl, combine the self-raising flour, salt, and pepper.
  • Combine egg, shaved ham, cheddar cheese, olive oil, milk, and flat-leaf parsley in a bowl. Mix thoroughly. Pour mixture into the flour and fold gently until just combined.
  • Spoon the mixture into a lightly greased mini muffin pan with 12 holes. Top each muffin with a half cherry tomato. Bake for 15-18 minutes or until golden. Serve warm or at room temperature.
