Ingredients:
  • 2 sheets frozen ready-rolled shortcrust pastry, partially thawed
  • 100g ham, chopped
  • 100g feta cheese, crumbled
  • 100g semi-dried tomatoes, chopped
  • 4 eggs
  • 126.25 gm thickened cream
Instructions:
  • Line the base and sides of a 2.5cm deep, 22cm (base) fluted, loose-based flan pan with pastry. Trim any excess pastry and freeze for 10 minutes, or until firm.
  • Preheat your oven and a baking tray to 200°C. Put the flan on the hot tray and bake the pastry case for 10 to 12 minutes, or until it turns a light golden color. Take it out of the oven and reduce the oven temperature to 180°C.
  • Lay out ham, feta, and tomatoes on pastry. In a jug, whisk together eggs, cream, salt, and pepper. Pour mixture into the pastry case. Bake for 25 minutes or until the center is set. Serve and enjoy!
