Elevate your ham and cheese omelette with feta, semi-dried tomatoes, and mozzarella for a gourmet twist.
Ingredients:
  • 8 eggs
  • Salt & freshly ground black pepper
  • 100g (1 cup) coarsely grated mozzarella
  • 100g baby spinach leaves
  • 4 slices leg ham
  • 100g semi-dried tomatoes
  • 125.00 ml loosely packed fresh basil leaves
  • 100g feta, drained, crumbled
  • 4 thick slices crusty bread, toasted, to serve (if desired)
Instructions:
  • For each omelette, crack and whisk 2 eggs with salt. Heat oil in a non-stick pan, add egg mixture, and cook until just set. Top with mozzarella, spinach, ham, semi-dried tomatoes, basil, and feta. Sprinkle with pepper, then fold and serve.
  • Continue cooking the remaining ingredients in the pan, making 3 more mouthwatering omelettes. Reheat the pan as needed between omelettes. Serve promptly with a side of hearty toast for a delightful meal.
