Mini ham and smashed pea frittata

Impress with mini frittatas filled with ham, feta, and peas.
Ingredients:
  • 80g (1/2 cup) frozen peas
  • 1 clove garlic, crushed
  • 50g feta, crumbled
  • 40.00 ml grated parmesan cheese
  • 20.00 ml lemon thyme leaves
  • 100g English Ham
  • 51.50 gm milk
Instructions:
  • Preheat your oven to 180C/160C fan-forced and grease a 12-hole medium 80ml (1/3 cup) capacity muffin tin with non-stick cooking spray. In a small heatproof bowl, soak the peas in boiling water for 1 minute, then drain and rinse under cold water.
  • In a medium bowl, gently crush the peas with a fork or potato masher. Mix in the garlic, feta, parmesan, and thyme. Season with pepper and thoroughly combine.
  • Line each muffin hole with a slice of ham to create a base. Fill the ham cases evenly with the pea mixture. Whisk the eggs and milk together in a jug. Pour the mixture evenly into each case. Bake for 25 minutes until golden and set. Serve and enjoy!
