Savory mushrooms enhance the cheesy ham filling.
Ingredients:
  • 36.40 gm olive oil
  • 4 large flat mushrooms, stalks trimmed
  • 8 slices double smoked ham, chopped
  • 3 tomatoes, diced
  • 250g feta, drained
  • 4 thick slices white bread, toasted
  • 39.60 gm whole-egg mayonnaise
  • 80g baby spinach leaves
Instructions:
  • Preheat your barbecue plate on high heat while creating a flavorful garlic oil mixture. Gently brush both sides of the mushrooms with the aromatic garlic oil. Place them on the barbecue plate, stalk-side down, and cook for 3 minutes before flipping.
  • Top mushrooms generously with savory ham, juicy tomatoes, and creamy feta. Cook until filling is heated through, about 2 to 3 minutes.
  • On individual plates, lay down a piece of toast and generously spread with creamy mayonnaise. Add a layer of fresh spinach and savory mushrooms. Sprinkle with a pinch of salt and pepper for flavor. Ready to enjoy!
