Creamy campanelle pasta with hearty mushrooms and ham - quick and easy comfort in a bowl!
Ingredients:
  • 1 (16 ounce) box campanelle pasta
  • 0.25 cup butter
  • 0.5 cup diced onions
  • 1 pound fresh mushrooms, chopped
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil
  • 2 teaspoons dried parsley
  • 2.5 cups diced ham
  • 1.5 cups heavy cream
  • 1 cup spaghetti sauce
  • 0.25 teaspoon cayenne pepper, or to taste
Instructions:
  • Bring a generously salted large pot of water to a lively boil. Cook pasta in the bubbling water, giving it an occasional stir, for 1 minute less than the package suggests, between 6 to 9 minutes. Drain pasta once done.
  • In a large saute pan over medium heat, melt butter. Add onion and garlic, cook until softened, about 5 minutes. Add mushrooms, oregano, basil, and parsley. Cook until mushroom liquid evaporates. Stir in ham, cook until heated through, 4 to 5 minutes.
  • Bring heavy cream to a boil in a pot, then stir in spaghetti sauce and cayenne. Simmer until the sauce reduces slightly. Add cooked pasta to the pot or transfer contents to a larger pan and cook for an additional 5 minutes. The sauce will thicken, pasta will finish cooking, and flavors will meld together beautifully.
