Ingredients:
  • cooking spray
  • 6 large eggs
  • 1.5 cups frozen chopped spinach, thawed and drained
  • 1 cup chopped red bell pepper
  • 7 ounces diced fully cooked ham
  • 0.75 cup egg whites
  • 0.25 cup crumbled feta cheese
  • 2 tablespoons water
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) while preparing a 12-cup muffin tin with cooking spray or paper liners.
  • Mix together eggs, spinach, red bell pepper, ham, egg whites, feta cheese, water, salt, and pepper in a bowl. Spoon the egg mixture into the muffin cups.
  • Bake in the preheated oven for 20-25 minutes until the center is set.
