Indulge your loved ones with a delicious ham and cheese bruschetta using flavorful Muir Glen® tomatoes - a must-have Italian appetizer.
Ingredients:
  • 1/3 cup juice reserved from canned tomatoes (below)
  • 1/3 cup honey
  • 1/3 cup apple cider vinegar
  • 1 loaf baguette French bread
  • 1/4 cup olive oil
  • 1/2 teaspoon fresh cracked black pepper
  • 1 can (14.5 oz) Muir Glen™ Organic or Meridian Ruby™ diced tomatoes, drained and 1/3 cup juice reserved
  • 1 package (5 oz) blue cheese, crumbled
  • 2 packages (3 oz ea) prosciutto or thinly sliced dry cured ham, cut into strips
Instructions:
  • Combine sweet and sour sauce ingredients in a 1-quart saucepan. Simmer over medium heat for about 10 minutes, stirring occasionally, until the sauce coats the back of a spoon.
  • Preheat oven to 400°F. Slice bread into 1-inch slices and lay them on a baking sheet. Brush each slice with olive oil and sprinkle pepper on one side. Toast in the oven for 5 to 7 minutes until golden brown.
  • On each piece of toasted bread, generously spoon 1 teaspoon of drained tomatoes. Sprinkle with crumbled blue cheese and top with prosciutto strips. Finish with a drizzle of sweet and sour sauce for delicious flavor.
