Ham, spinach, tomato and egg pie

Family-friendly budget pie - perfect for a crowd.
Ingredients:
  • 250g frozen spinach, thawed
  • 100g sliced lean leg ham, chopped
  • 40.00 ml finely chopped fresh chives
  • 500g ricotta cheese, crumbled
  • 125.00 ml grated reduced-fat tasty cheese
  • 62.50 ml finely grated parmesan cheese
  • 8 sheets filo pastry
  • Olive oil cooking spray
  • 3 hard-boiled eggs, peeled, halved
  • 1/2 x 250g punnet cherry tomatoes, halved
Instructions:
  • Place spinach in a bowl and squeeze out any excess liquid using your hands. Preheat the oven to 200°C/180°C fan-forced and grease a 7cm-deep, 27cm x 17cm ovenproof dish.
  • Mix together fresh spinach leaves, diced ham, finely chopped chives, a variety of cheeses in a bowl. Add a pinch of salt and a dash of freshly ground black pepper to enhance the flavors.
  • Lay down one sheet of pastry on a flat surface and spray with oil. Repeat to make 4 layers. Line the dish with pastry, spread cheese mixture, and press in egg and tomatoes. Cut remaining pastry into 4cm strips, scrunch them up, and place on top of the filling. Spray with oil and bake until golden, roughly 25 to 30 minutes. Serve hot.
