Ingredients:
  • olive oil cooking spray
  • 5 thick slices white bread, quartered
  • 125g frozen spinach, thawed
  • 200g lean shaved ham
  • 1 large roma tomato, thinly sliced
  • 100g ricotta cheese, crumbled
  • 6 large eggs
  • 257.50 gm low-fat milk
  • 23.40 gm dijon mustard
  • 6.10 gm worcestershire sauce
Instructions:
  • Preheat your oven to 180°C. Grease an 8 cup capacity ovenproof dish. Arrange bread quarters in rows, crust-side down, in the dish. Pat dry spinach to remove excess moisture. Layer spinach, ham, and tomato between and around the bread quarters. Finish by generously sprinkling with ricotta.
  • In a jug, vigorously whisk together eggs, milk, mustard, Worcestershire sauce, salt, and pepper until smooth. Pour the mixture evenly over the bread.
  • Bake until golden and perfectly set for about 30 minutes. Serve hot.
