Kid-friendly upside-down pies, light on fat, heavy on flavor, and budget-friendly.
Ingredients:
  • Olive oil spray
  • 100g Double Smoked Leg Ham
  • 50g baby spinach leaves, shredded
  • 25g (1/4 cup) coarsely grated cheddar
  • 6 eggs
  • 6 thick white bread slices
  • 15.00 gm butter or margarine
  • Tomato chutney, to serve
  • Mixed salad leaves, to serve
Instructions:
  • Preheat the oven to 200°C. Lightly grease six 200ml-capacity muffin pans with olive oil spray. Place 2 slices of ham in the base of each pan.
  • Evenly distribute the spinach and cheddar among the pans, then crack one egg into each pan. Season with salt and pepper.
  • Spread each slice of bread generously with butter, then use a 9cm-diameter round pastry cutter to cut out 1 disc from each slice. Place a buttered bread slice, butter-side down, on top of each egg. Bake for 8 minutes or until the egg is set and the bread is golden. Carefully run a small knife around the inside edge of each pan, then turn the pies out onto a baking tray.
  • Preheat the grill to high. Grill the ham for 2 minutes or until crisp. Serve on plates and top with chutney. Accompany with mixed salad leaves.
