Enjoy a quick and tasty spinach and ham frittata - perfect for any night of the week. Note: Can be made Low FODMAP-friendly.
Ingredients:
  • 1 bunch English spinach, trimmed, shredded
  • 100g shaved leg ham, chopped
  • 6 eggs
  • 126.25 gm pure cream
  • 82.50 ml grated parmesan cheese
  • 2 garlic cloves, crushed
  • 250g cherry tomatoes, halved
Instructions:
  • Preheat your oven to 190C/170C fan-forced. Grease a 6cm-deep, 19cm square cake pan and line the base and sides with baking paper, leaving a 2cm overhang on two sides.
  • Layer half of the spinach at the bottom of the prepared pan and layer half of the ham on top. Repeat with the remaining spinach and ham.
  • Combine eggs, cream, cheese, and garlic in a pitcher, then season with salt and pepper. Pour the mixture over the spinach, and finish by topping with tomato halves cut-side up.
  • Bake until beautifully golden and set, about 35-40 minutes. Serve and enjoy!
