Penne with Spinach and Ham

25-Minute Italian-Inspired Spinach and Ham Pasta - Quick and Delicious Dinner Option!
Ingredients:
  • 2 2/3 cups uncooked whole wheat penne pasta (8 oz)
  • 2 teaspoons olive oil
  • 1 medium onion, chopped (1/2 cup)
  • 4 cloves garlic, finely chopped
  • 1 1/2 cups grape tomatoes or halved cherry tomatoes
  • 2/3 cup finely chopped cooked ham
  • 1/2 cup dry white wine or water
  • 4 cups fresh spinach leaves
  • 2 tablespoons finely shredded Parmesan cheese
Instructions:
  • Prepare pasta according to package directions, excluding salt.
  • In a 10-inch nonstick skillet over medium heat, heat oil. Cook onion and garlic for 3 to 4 minutes until onion is tender. Add tomatoes, ham, and wine, then cook until some of the wine evaporates.
  • Combine the fresh spinach and cooked pasta in the pan, giving it a delicate mix. Finish off by generously sprinkling cheese over the top.
