Penne Pasta with Spinach and Bacon

Quick and delicious bacon spinach pasta with tomatoes and penne, perfect for any season and versatile.
Ingredients:
  • 1 bunch fresh spinach, rinsed and torn into bite-size pieces
  • 1 (12 ounce) package penne pasta
  • 2 tablespoons olive oil, divided
  • 6 slices bacon, chopped
  • 2 tablespoons minced garlic
  • 1 (14.5 ounce) can diced tomatoes
Instructions:
  • Place spinach in a colander over the sink; set aside.
  • Bring a pot of salted water to a gentle boil. Add penne and cook, stirring occasionally, until al dente, about 11 minutes.
  • While the penne is boiling, in a skillet over medium heat, warm up 1 tablespoon of flavorful olive oil. Cook the bacon in the fragrant oil until it turns golden and crispy. Add garlic and sauté for a minute. Mix in the tomatoes and cook until warmed through.
  • Drain the hot pasta over the spinach in the colander to wilt it. Then transfer the spinach-pasta mixture to a large serving bowl. Finally, top with the bacon-tomato mixture and remaining 1 tablespoon of olive oil, tossing until evenly combined.
