Elevate pasta and spinach with crispy fried breadcrumbs.
Ingredients:
  • 500g penne rigate
  • 60ml (1/4 cup) olive oil
  • 90g coarse fresh breadcrumbs
  • 1 garlic clove, crushed
  • 1-2 small fresh red chillies (optional), seeded, thinly sliced
  • 2 tsp finely grated lemon rind
  • 150g baby spinach leaves
  • 125.00 ml chopped fresh continental parsley
  • 1 bunch chives, cut into 3cm lengths
  • 50g (1/3 cup) coarsely grated parmesan
Instructions:
  • Boil the pasta in a pot of salted water until perfectly cooked. Drain well and return to the pot.
  • Heat up oil in a big non-stick pan over medium heat. Cook breadcrumbs until starting to brown, then add garlic and chili and cook until crisp and golden. Remove from heat, mix in lemon rind, and season with salt and pepper.
  • Toss the remaining oil and spinach into the pasta until the spinach just wilts. Add parsley, chives, and parmesan, then season with salt and pepper, gently combining everything.
  • Serve the pasta mixture in bowls and sprinkle with the breadcrumb mixture.
