Ham and artichoke pizza

Transform simple dough into a delicious base for gourmet pizza.
Ingredients:
  • Olive oil, to grease
  • 450g (3 cups) plain bread flour
  • 20.00 ml (12g/2 sachets) dried yeast
  • 10.00 gm caster sugar
  • 1.20 gm salt
  • 250ml (1 cup) warm milk
  • 40.00 gm melted butter
  • 250ml (1 cup) passata (tomato pasta sauce)
  • 250g mozzarella, thinly sliced
  • 2 x 170g btl marinated artichokes, drained, coarsely chopped
  • 82.50 ml fresh oregano leaves
  • 200g shaved ham
  • 80g baby spinach leaves
Instructions:
  • In a large bowl, mix together flour, yeast, and sugar, then stir in the salt. Create a well in the center and add the milk and butter.
  • Stir the mixture with a wooden spoon until well combined, then use your hands to form the dough in the bowl. Transfer to a lightly floured surface and knead for 10 minutes until smooth and elastic.
  • Grease a large bowl with olive oil. Place the dough in the bowl and cover it with a damp tea towel. Let it proof in a warm, draft-free spot for 45 minutes to 1 hour or until it almost doubles in size.
  • Using your fist, gently deflate the center of the dough. Transfer the dough to a floured surface and knead for 2 minutes, or until it is smooth, elastic, and has doubled in size.
  • Preheat the oven to 240C. Grease 2 baking trays with olive oil. Divide the dough in half. Roll out each dough half with a lightly floured rolling pin into a 30cm-diameter disc. Place each disc on a prepared tray.
  • Smoothly spread the passata onto the pizza bases, ensuring to leave a 1cm-wide border.
  • Cover the dish with the mozzarella and artichoke, then sprinkle on the oregano. Bake in the oven until golden brown, about 12 minutes.
  • Serve topped with savory ham and fresh spinach leaves.
