Easy ham and sun-dried tomato omelette for a delicious breakfast!
Ingredients:
  • 41.20 gm milk
  • 40.00 ml finely chopped fresh chives
  • Olive oil cooking spray
  • 20g baby spinach
  • 100g shaved leg ham
  • 82.50 ml finely chopped semi-dried tomatoes
Instructions:
  • In a jug, combine eggs, milk, chives, salt, and pepper.
  • Prepare a small, non-stick pan by lightly spraying it with oil and heating it over medium heat. Pour 1/3 cup of the egg mixture into the pan, swirling it to spread thinly across the base. Cook for 1 to 2 minutes until just set, then transfer to a board. Repeat this process with the remaining mixture to make a total of 4 delicious omelettes.
  • Arrange a generous portion of spinach, ham, and tomato down the center of each omelette. Roll the omelette up around the filling, ensuring it is fully enclosed. Enjoy your delicious creation.
