Try this simple and delicious one-pan skillet chicken with cherry tomatoes for a crowd-pleasing dinner!
Ingredients:
  • 1 1/2 pounds boneless, skinless chicken breasts
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons herb-infused olive oil, plus more, if needed
  • 1 tablespoon unsalted butter
  • 1/2 medium red onion, thinly sliced
  • 3 cloves garlic, minced
  • 1/2 cup dry white wine
  • 3 cups cherry tomatoes, halved
  • 1/4 teaspoon red pepper flakes, or to taste
  • 1/2 cup cream, or to taste
  • 1 tablespoon minced fresh basil, plus more for garnish
  • 1/4 cup grated Parmesan cheese
Instructions:
  • Ensure the chicken breasts are completely dried using paper towels, then generously season both sides with smoked paprika, salt, and pepper.
  • Heat herb-infused olive oil and butter in a large, non-stick skillet over medium heat until the butter is foamy. Add chicken breasts and cook until browned on both sides, about 4 to 5 minutes per side. Transfer chicken to a plate to keep warm.
  • In the same skillet, sauté red onion slices until tender, for 3 to 4 minutes. If needed, drizzle in a touch more olive oil. Add garlic and cook until aromatic, around 30 seconds.
  • Pour in a splash of white wine and cook, stirring for 1 minute. Follow by adding the cherry tomatoes and a pinch of red pepper flakes.
  • Add cream to the sauce and simmer until bubbly. Place the chicken back into the skillet along with any juices. Cover, simmer on low heat until chicken is cooked through, approximately 10 minutes. Use an instant-read thermometer to ensure the chicken reaches an internal temperature of at least 165 degrees F (74 degrees C).
  • Top your dish with a generous sprinkle of fresh minced basil and grated Parmesan. For an extra burst of flavor, add more basil on top as a garnish.
