Make spicy Mexican chicken with juicy chicken breasts, rice, beans, salsa, and corn for a quick, flavorful meal in under 30 minutes. Heat things up with this easy Spicy Skillet Chicken recipe!
Ingredients:
  • 1 to 2 teaspoons chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 boneless skinless chicken breasts (about 1 1/4 lb)
  • 1 tablespoon vegetable oil
  • 1 can (15 oz) Progresso™ black beans, drained, rinsed
  • 1 can (11 oz) whole kernel corn with red and green peppers, undrained
  • 1/3 cup thick & chunky salsa
  • 2 cups hot cooked rice
Instructions:
  • Combine chili powder, salt, and pepper in a small bowl, then evenly season both sides of the chicken breasts.
  • Heat oil in a 10-inch nonstick skillet over medium heat, then cook chicken for 8 to 10 minutes, turning once, until the chicken reaches an internal temperature of 170°F and the juices run clear.
  • Combine beans, corn, and salsa in the pot and bring to a boil. Lower heat, cover, and simmer for 3 to 5 minutes until vegetables are heated through. Serve alongside rice.
