Gluten-free cherry berry puddings

Prepare colorful gluten-free berry puddings ahead by soaking bread for vibrant results.
Ingredients:
  • 250g punnet strawberries, hulled, chopped
  • 125g punnet raspberries
  • 250g frozen mixed berries
  • 250g fresh cherries, pitted, chopped
  • 75g (1 ⁄3 cup) raw sugar
  • 1 vanilla bean, split
  • 2 oranges
  • 520g loaf thickly sliced gluten-free white bread, crust removed
  • Extra fresh berries, to serve
  • Coconut yoghurt, to serve
Instructions:
  • Prepare the moulds by lightly spraying six 5.5cm (base measurement), 7.5cm (top measurement), 125ml (1 ⁄2 cup) moulds with oil. In a saucepan, combine the berries, cherries, sugar, vanilla bean, grated rind of 1 orange, orange juice, and water. Cook over medium-low heat until the sugar dissolves. Increase heat and boil, then simmer for 3-5 minutes until slightly thickened. Cool completely, then strain and reserve both berries and liquid.
  • Cut each slice of bread in half horizontally to create thinner slices. Use a rolling pin to flatten all the bread slices. Cut out 6 rounds using a 5.5cm cutter and 6 larger rounds using a 7.5cm cutter. Discard any excess bread. Finally, cut the remaining slices of bread in half crosswise.
  • Submerge the smaller rounds in the berry liquid you set aside. Put one round at the bottom of each mould. Soak the halved bread slices in the berry liquid. Press 3 slices firmly around the rim of each mould, slightly overlapping them.
  • Fill each mold generously with the reserved berries, ensuring they are packed tightly. Dip the larger bread rounds in the remaining berry liquid and place them firmly on top. Spoon over any extra liquid to moisten the bread if needed. Cover tightly with plastic wrap and refrigerate overnight to chill. Save any remaining liquid for later use.
  • Gently release the puddings from their molds and place them on plates. Drizzle with the berry liquid, garnish with fresh berries, and a dollop of coconut yoghurt.
