Delicious cherry friands, the perfect gluten-free treat to enjoy with tea.
Ingredients:
  • 5 egg whites, lightly beaten
  • 133.00 gm almond meal
  • 1 tsp vanilla bean paste
  • 225.00 gm gluten-free pure icing sugar, sifted
  • 165.00 ml gluten-free plain flour
  • 150g butter, melted, cooled
  • 415g can stoneless black cherries, drained, halved
Instructions:
  • - Preheat oven to 190C/170C fan-forced. - Grease a 12-hole, 1/3 cup-capacity muffin pan. - In a bowl, mix egg white, almond meal, vanilla, icing sugar, flour, and butter. - Distribute the mixture evenly among the greased muffin pan. - Place cherries on top before baking.
  • Bake until golden and firm to touch, for about 20 to 22 minutes. Let it rest in the pan for 2 minutes before transferring to a wire rack to cool. Serve and enjoy.
