Dairy-free Vanilla Ice Cream Remix
Ingredients:
  • 2 vanilla pods
  • 1 teaspoon vanilla-bean paste
  • 1 x 400 g tin of light coconut milk
  • 300 ml unsweetened organic soya milk
  • 165 g agave syrup
Instructions:
  • Split vanilla pods, extract seeds, add to a large bowl. Discard pods. Combine with remaining ingredients. Transfer to ice cream maker and churn for 40 minutes until smooth, scraping down the sides. Stir, move mixture to freezer-proof container. Freeze for about 2 hours until set. Serve. No ice cream maker? Pour mixture into container, freeze for 3 to 4 hours, whisking every 30 minutes.
