Dairy-free vanilla crazy cake

Delicious dairy-free cake made without butter or eggs, known as crazy or wacky cake.
Ingredients:
  • 300g (2 cups) plain flour
  • 215g (1 cup) caster sugar
  • 6.00 gm baking powder
  • 80ml (1/3 cup) light tasting olive oil
  • 1 tsp white vinegar
  • 4.40 gm vanilla extract
  • Vanilla frosting, to serve
  • Coconut flakes, to serve
  • Ferrero Raffaello balls, to serve, optional
Instructions:
  • Preheat the oven to 180C/160C fan forced. Grease and line a square 20cm cake pan with baking paper.
  • Combine the flour, sugar, and baking powder in a bowl, whisk until mixed. Create a well in the center. Pour in the oil, vinegar, vanilla, and 250ml (1 cup) water. Whisk slowly until a smooth batter forms. Transfer the batter into the prepared pan. Bake for 17 minutes or until a skewer comes out clean when inserted in the center. Let it cool in the pan for 5 minutes before moving it to a wire rack to cool entirely.
  • Generously coat the cake with vanilla frosting, then sprinkle with coconut flakes and decorate with Raffaellos.
