Gluten-free cherry cheesecake brownies with a decadent chocolate swirl - a crowd-pleasing treat for your loved ones.
Ingredients:
  • 1 cup butter
  • 2 cups white sugar
  • 0.66666668653488 cup cocoa powder
  • 4 eggs
  • 2 teaspoons vanilla extract
  • 1 cup gluten-free all purpose baking flour
  • 0.5 teaspoon gluten-free baking powder
  • 0.25 teaspoon salt
  • 1 (8 ounce) package cream cheese, softened
  • 0.33333334326744 cup white sugar
  • 1 egg
  • 1 (21 ounce) can cherry pie filling
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease a 9x13-inch baking pan.
  • In a microwave-safe bowl, melt butter on high for about 1 minute. Add sugar and cocoa powder, stir well. Using an electric mixer, blend in eggs one at a time, then mix in vanilla extract. In a separate bowl, combine flour, baking powder, and salt. Gently fold the dry ingredients into the batter until well combined. Pour the mixture into the prepared baking pan and smooth the surface with a knife or spatula.
  • In a separate bowl, mix cream cheese, sugar, and 1 egg until velvety. Spoon the cream cheese mixture onto the brownie batter evenly.
  • Strain the cherries from the jelled filling and spoon them over the cream cheese mixture, reserving any extra jelly for future use. Swirl everything together gently with a knife.
  • Bake the brownies in the preheated oven until set with edges pulling away from the sides of the pan, for 35 to 45 minutes. Cool completely before cutting into bars.
