Nut and seed veggie burgers with cauliflower and broccoli - a crowd-pleasing vegan, gluten-free, and paleo option.
Ingredients:
  • 0.66666668653488 cup 1/2-inch butternut squash cubes
  • 0.5 cup chopped cauliflower
  • 0.5 cup chopped broccoli
  • 0.5 cup raw walnuts
  • 0.25 cup raw almonds
  • 0.25 cup raw sunflower seed kernels
  • 0.25 teaspoon ground cumin
  • 0.125 teaspoon ground black pepper
  • 1 tablespoon vegetable oil
Instructions:
  • Fill a saucepan with water, place a steamer insert inside, ensuring the water is just below the bottom of the steamer. Bring the water to a boil. Add butternut squash cubes, cover, and steam for 7 to 10 minutes until tender. Transfer the cooked squash to a bowl, mash it, and reserve 1/2 cup of the mashed squash for later use.
  • Put the steamer insert back into the saucepan and fill with water just below the bottom of the steamer. Bring to a boil, then add cauliflower and broccoli. Cover and steam until tender, for 2 to 6 minutes.
  • Pulse walnuts, almonds, and sunflower seeds in a blender or food processor until coarse breadcrumbs form. Add broccoli and cauliflower, blend until finely chopped and combined.
  • Combine 1/2 cup of mashed squash with salt, cumin, and black pepper into the nut mixture until thoroughly combined. If too thick to blend, move to a bowl and mix by hand until well incorporated.
  • Shape the mixture into 4 evenly sized patties.
  • In a large skillet, heat oil over medium-high heat. Brown and heat patties in the hot oil for about 2 minutes on each side.
