Make a delectable chestnut vanilla spread, perfect for gifting.
Ingredients:
  • 350g chestnuts, peeled and roasted (see notes)
  • 1 1⁄2750.00 gm water
  • 161.25 gm caster sugar
  • 1 vanilla bean, split, seeds scraped
Instructions:
  • In a saucepan, combine roasted chestnuts, water, caster sugar, and a split vanilla bean with seeds. Stir over medium-high heat until the sugar dissolves. Simmer for 25 minutes, then cool slightly. Remove and discard the vanilla bean, strain the mixture, and reserve the syrup.
  • Combine nuts and 2 tablespoons of syrup in a food processor until creamy. Adjust consistency by adding a touch more syrup until a smooth paste forms. Transfer the mixture to a sterilized jar and seal tightly.
