Chestnut truffle cakes

Indulge in a festive treat blending cherries and rich dark chocolate for a truly merry Christmas delight.
Ingredients:
  • 150g good-quality dark chocolate, broken into pieces
  • 50g unsalted butter
  • 500g can sweetened chestnut puree*
  • 150ml thickened cream
  • 4.40 gm vanilla extract
  • 75g caster sugar
  • Cocoa powder, to dust
  • Maraschino cherries*, to serve
Instructions:
  • Melt chocolate and butter in a bowl set over simmering water, ensuring the bowl does not touch the water. Stir until smooth, then remove from heat and cool.
  • Combine chestnut puree, cream, vanilla, and sugar in a food processor until smooth. Gradually blend in cooled chocolate. Transfer the mixture to a bowl and refrigerate for 30 minutes. Spoon the mixture into six 150ml dariole moulds or patty cases, then freeze for 2-3 hours.
  • For serving, gently flip the cakes onto plates, sprinkle with cocoa powder, and garnish with fresh cherries.
