Chewy Barley-Nut Cookies

Chewy barley drop cookies with nuts and cinnamon, ready in 45 minutes.
Ingredients:
  • 1/3 cup canola oil
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1/4 reduced-fat mayonnaise or salad dressing
  • 1 teaspoon vanilla
  • 2 cups rolled barley or 2 cups plus 2 tablespoons old-fashioned oats
  • 3/4 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon ground cinnamon
  • 1/3 cup “heart-healthy” mixed nuts (peanuts, almonds, pistachios, pecans, hazelnuts)
Instructions:
  • Preheat oven to 350°F and generously spray a cookie sheet with cooking spray.
  • In a medium bowl, combine oil, sugars, mayonnaise, vanilla, and egg using a spoon. Add barley, flour, baking soda, salt, and cinnamon. Mix in the nuts.
  • Use a rounded measuring tablespoon to drop dough 2 inches apart on a cookie sheet.
  • Bake until edges turn golden brown for 10-14 minutes. Let cool for 2 minutes, then transfer from the sheet to a cooling rack.
