Deliciously moist corn cake with a sweet twist, resembling corn pudding.
Ingredients:
  • 0.5 cup butter
  • 0.33000001311302 cup masa harina
  • 1.5 cups whole kernel corn
  • 0.25 cup cornmeal
  • 0.33000001311302 cup white sugar
  • 2 tablespoons heavy cream
  • 0.5 teaspoon baking powder
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect cooking temperature.
  • In a medium bowl, use an electric mixer to whip the butter into a creamy texture. Mix in the masa harina and water until thoroughly combined.
  • Use a food processor or blender to coarsely chop the corn, leaving some whole pieces. Combine the processed corn and cornmeal with the butter mixture.
  • Combine sugar, cream, salt, and baking powder in a bowl until mixed. Fold the sugar mixture into the butter, then transfer to a 9x9-inch baking dish and cover with foil.
  • - Prepare a water bath by lining a roasting pan with a damp kitchen towel and placing a baking dish on top. - Fill the roasting pan with boiling water until it reaches halfway up the sides of the baking dish. - Bake for 50 to 60 minutes until a toothpick inserted in the center comes out clean. - Remove the baking dish from the water bath and allow it to rest for 10 minutes. - Serve by scooping out portions with an ice cream scoop or large spoon.
