Chicken, chickpea and fetta salad

Delicious and healthy salad, perfect for lunch in a baguette or wrap!
Ingredients:
  • 1 large barbecue chicken
  • 400g can chickpeas, drained, rinsed
  • 285g jar whole piquillo peppers, drained, rinsed, thinly sliced (see note)
  • 350g jar feta
  • 50.00 ml red wine vinegar
  • 100g baby rocket
Instructions:
  • Peel off and discard chicken skin and bones. Shred the chicken, then mix it with chickpeas and peppers in a large bowl.
  • Drain feta, saving 1/2 cup oil. Mix saved oil and vinegar in a small jug. Pour over chicken mixture and toss well.
  • Combine rocket and feta cheese, then mix well. Serve.
