Elevate classic green bean casserole with flavorful ground chicken and eggplant for a satisfying main dish twist.
Ingredients:
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 0.75 cup sour cream
  • 0.25 cup diced onion
  • 2 teaspoons garlic powder
  • 1 teaspoon white sugar
  • 1 teaspoon ground nutmeg
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.5 pound ground chicken
  • 2 cups fresh green beans, chopped
  • 1 eggplant, sliced into thin rounds
  • 2 cups shredded Cheddar cheese
  • 0.5 cup crumbled buttery round crackers
  • 1 tablespoon butter, melted
Instructions:
  • Preheat oven to 350°F (175°C) for a perfectly baked dish.
  • In a large skillet over medium heat, melt 2 tablespoons of butter. Whisk in flour until smooth and cook for 1 minute. Add sour cream, onion, garlic powder, sugar, nutmeg, salt, and pepper, stirring until combined. Mix in ground chicken and green beans, cooking until chicken is browned and onion is translucent, about 7 to 10 minutes.
  • Layer eggplant rounds in a 9x13-inch baking dish, spoon chicken and green bean mixture over the eggplant, and sprinkle with Cheddar cheese.
  • Combine cracker crumbs and 1 tablespoon of melted butter in a bowl, ensuring all the crumbs are perfectly coated, then generously sprinkle over the Cheddar cheese.
  • Bake in a preheated oven until the top turns golden and the cheese is nice and bubbly, approximately 30 minutes.
