Chicken parmigiana with green beans recipe

30-Minute Chicken Parmigiana: Quick and Delicious.
Ingredients:
  • 4 Australian Chicken Breast Schnitzels
  • Olive oil, to shallow-fry
  • 1 small eggplant, cut crossways into 8 slices
  • 125ml passata
  • 40g baby spinach leaves
  • 100g pizza cheese
  • 200g green beans, trimmed
  • 200g Perino tomatoes, halved
Instructions:
  • Preheat the oven to 200°C. Line a large baking tray with foil and spray it with olive oil. Arrange the chicken on the tray and bake for 10 minutes.
  • Heat oil in a large frying pan over medium-high heat. Cook eggplant in batches for 1 minute on each side until golden brown. Transfer to a paper towel-lined plate.
  • Turn the chicken on the tray using tongs. Evenly spread the passata over the chicken. Top with spinach, eggplant, and cheese. Bake until cheese is golden brown and chicken is cooked through, about 10 minutes.
  • While the parmigiana bakes, blanch the green beans in boiling water for 2 minutes until they are vibrant green and tender-crisp. Drain well.
  • Plate the parmigiana evenly among the serving plates and serve alongside the beans and tomato.
