Ingredients:
  • 6 chicken thigh fillets, chopped
  • 1 fennel, thinly sliced
  • 1 leek, thinly sliced
  • 40.00 ml plain flour
  • 510.00 gm chicken style liquid stock
  • 58.75 gm sour cream
  • 23.40 gm dijon mustard
  • 20.00 ml finely chopped tarragon
  • 2 sheets ready-rolled shortcrust pastry
  • 1 swede, peeled, coarsely chopped
  • 2 potatoes, peeled
  • 20g butter
Instructions:
  • In a large frypan, heat half of the oil over high heat. Add one-third of the chicken and cook for 5 minutes, turning occasionally until it is nicely browned all over. Transfer the cooked chicken to a bowl. Repeat this process with the remaining chicken in two more batches.
  • In the same pan, heat the remaining oil over medium heat. Cook the fennel, stirring, for 5 minutes until tender. Add the leek and cook for 2 more minutes until soft. Stir in the chicken and sprinkle with flour. Cook for 2 minutes until combined. Pour in the chicken stock and bring to a boil. Stir for 5 minutes until the sauce thickens. Remove from heat and mix in the sour cream, mustard, and tarragon. Season with salt and pepper to taste.
  • Preheat the oven to 220C. Cut the pastry sheets in half and line four 1 1/4-cup capacity pie tins with the pastry, leaving the corners to overhang. Prick the bases with a fork and bake in the oven for 15 minutes until they are golden brown and crisp.
  • In a large saucepan, cover swede and potato with cold water and bring to a boil. Cook for 15 minutes or until tender. Drain well, then return to the pan with butter. Mash with a fork or potato masher until smooth. Season with salt and pepper to taste.
  • Divide the seasoned chicken mixture into the pastry cases and generously top each with creamy mashed swede. Bake for 10 minutes or until piping hot. Serve straight away to enjoy the delicious flavors!
