Slow-cooker French-style chicken soup

Delicious slow cooker chicken and veggie soup - sauté, add broth, and let it simmer until perfection.
Ingredients:
  • 9.20 gm extra virgin olive oil
  • 900g chicken drumstick
  • 2 celery stalks, trimmed, thinly sliced
  • 2 carrots, diced
  • 1 leek, trimmed, halved, thinly sliced
  • 1 fennel bulb (fronds reserved), trimmed, diced
  • 1.25 litres chicken style liquid stock
  • 3 fresh thyme sprigs
  • 125.00 ml frozen peas
  • 4 slices crusty bread, to serve
Instructions:
  • In a non-stick frying pan over medium-high heat, heat oil until shimmering. Brown chicken on all sides for about 5 minutes. Transfer the chicken to a 5.5-litre slow cooker.
  • Combine celery, carrot, leek, fennel, stock, and thyme in a pot. Season with salt and pepper, cover, and cook on low for 6 hours or high for 4 hours. Add peas during the final 10 minutes of cooking. Remove and discard thyme before serving.
  • Take the chicken out of the soup and place it on a cutting board. Remove and discard the bones, then roughly shred the chicken before adding it back to the soup.
  • Garnish with the saved fennel fronds and pair with crusty bread for serving.
