Elevate pork and beans with country-style ribs, great northern beans, and kielbasa for a delicious twist!
Ingredients:
  • 2 slices bacon, chopped
  • 1 lb boneless country-style pork ribs, cut into 3/4-inch pieces
  • 1/2 cup finely chopped onion
  • 1 cup shredded carrots
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (8 oz) tomato sauce
  • 1 teaspoon dried thyme leaves
  • 1/2 teaspoon pepper
  • 2 cans (15 to 16 oz each) great northern beans, drained
  • 1/2 lb cooked kielbasa, cut into 1/2-inch pieces
Instructions:
  • In a 10-inch skillet over medium-high heat, sauté bacon, pork pieces, and onion for 8 to 10 minutes, stirring occasionally, until pork starts to brown.
  • Grease a 3 1/2- to 4-quart slow cooker with cooking spray. Add pork mixture to the cooker and mix in all ingredients except beans and kielbasa. Arrange beans on top of the mixture.
  • Simmer covered on Low heat for 6 to 7 hours.
  • Add the kielbasa and turn up the heat to High. Cover and simmer for an additional 30 minutes, or until fully heated through.
