Try this budget-friendly Asian salad with delicious chicken schnitzel.
Ingredients:
  • 2 limes
  • 18.20 gm peanut oil
  • 1 stalk lemongrass (white part only), finely chopped
  • 2 garlic cloves, crushed
  • 22.00 gm sweet chilli sauce
  • 42.00 gm soy sauce
  • 500g chicken schnitzel
  • 125g vermicelli noodles
  • 125.00 ml dry-roasted cashew nuts
  • 1 medium red capsicum, chopped
  • 1 large Lebanese cucumber, halved, thinly sliced
  • 250.00 ml fresh mint leaves, torn
  • 250.00 ml fresh coriander leaves
Instructions:
  • Grate the lime zest finely and squeeze the juice from the limes. In a glass bowl, mix the lime zest, oil, lemongrass, garlic, sweet chilli sauce, and 1 tablespoon of soy sauce. Add the chicken and toss until coated. Cover and refrigerate for 30 minutes.
  • Place noodles in a heatproof bowl and cover with boiling water. Let sit for 5 minutes or until tender. Drain, rinse, and roughly chop before transferring to a bowl.
  • Preheat a chargrill pan over medium-high heat. Grill chicken for 4 to 5 minutes on each side until golden and fully cooked. Place chicken on a board and slice into 1cm thick pieces.
  • Combine the chicken, cashews, capsicum, cucumber, mint, coriander, lime juice, and remaining soy sauce with the noodles. Season with salt and pepper, then toss everything together. Serve and enjoy.
