Enhance pasta with zesty preserved lemon for a burst of flavor.
Ingredients:
  • 1/2 barbecued chicken
  • 500g tagliatelle or fettucine
  • 80g pea
  • Juice of 1/2 lemon
  • 125ml olive oil
  • 1 garlic clove, finely grated
  • 40.00 ml chopped preserved lemon rind (see note) (white pith and flesh discarded)
  • 40g pine nut
  • Chives, to serve
  • Grated parmesan, to serve
Instructions:
  • Shred the flavorful barbecued chicken, separating the meat from the skin and bones. Keep it aside for later.
  • Boil pasta in salted water as per packet instructions, adding peas for the last 2 minutes of cooking.
  • In a spacious bowl, vigorously whisk together lemon juice, oil, garlic, salt, and pepper to create a flavorful dressing for the pasta.
  • Combine drained pasta and peas in a bowl. Add chicken, preserved lemon, and pine nuts. Divide into 4 bowls and top with chopped chives and parmesan before serving.
