Chicken, Rice, and Green Bean Casserole

Creamy chicken, green bean, and wild rice casserole baked to perfection.
Ingredients:
  • 1 (6 ounce) package wild rice (such as Uncle Ben's ®)
  • 3 cups water
  • 1 tablespoon vegetable oil
  • 1 pound skinless, boneless chicken breast meat - cut into chunks
  • 1 (14.5 ounce) can French-cut green beans, drained
  • 1 (10.75 ounce) can cream of mushroom soup
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C).
  • In a saucepan, simmer wild rice in water until tender but not mushy, about 20 to 25 minutes. Drain any excess liquid, fluff with a fork, and cook uncovered for an additional 5 minutes.
  • As the rice simmers away, warm the oil in a pan over medium heat. Sear the chicken until golden brown all over, approximately 5 minutes. Mix together the rice, chicken, green beans, mushroom soup, and mayonnaise in a spacious baking dish.
  • Roast in the oven until the chicken is cooked through, approximately 45 minutes.
