Chicken, tarragon and almond sandwich

Try this quick and easy gourmet sandwich for a stress-free dinner.
Ingredients:
  • 2 small chicken breast fillets
  • 81.68 gm whole-egg mayonnaise
  • 2 tsp finely chopped fresh tarragon
  • 40.00 ml slivered almonds, toasted
  • 8 thick slices rye bread
  • 80g baby rocket
  • Extra fresh tarragon, to serve
Instructions:
  • Cut each chicken breast in half lengthwise to create 4 thin fillets. Drizzle with oil and season with salt and pepper. Heat a frying pan or chargrill over medium-high heat. Cook chicken in 2 batches for 3 to 4 minutes per side.
  • Cook the chicken until it is fully cooked. Then, transfer it to a plate and cut it in half.
  • In a bowl, mix mayonnaise, tarragon, and almonds. Season with salt and pepper. Spread the mayonnaise mixture on one side of each slice of bread. Top with rocket and chicken.
  • Garnish the sandwiches generously with additional tarragon.
