Elevate leftover chicken with creamy vegetable-filled white sauce on fluffy biscuits.
Ingredients:
  • 1 (14.5 ounce) can chicken broth
  • 0.33333334326744 cup sherry
  • 1 tablespoon water, or as needed
  • 0.33333334326744 cup unsalted butter
  • 0.75 cup sliced carrots
  • 0.5 cup chopped onions
  • 0.5 cup chopped celery
  • 2 cups chopped fresh mushrooms
  • 1 teaspoon kosher salt
  • 0.5 teaspoon ground black pepper
  • 4 cloves garlic, minced
  • 0.33333334326744 cup all-purpose flour
  • 1.5 cups milk
  • 0.5 cup heavy cream
  • 2 cups chopped cooked chicken
  • 1.5 cups frozen green peas
  • 2 teaspoons Worcestershire sauce
  • 6 biscuits, warmed
  • 1 tablespoon chopped fresh parsley, or to taste
Instructions:
  • Mix chicken broth and sherry, then pour in additional water until you have 2 cups of flavorful liquid. Reserve for later use.
  • In a large nonstick skillet, melt butter over medium heat until bubbly. Sauté carrots, onions, and celery until onions soften, about 3 to 5 minutes. Ensure carrots are firm yet tender. Add mushrooms, kosher salt, and pepper, cook for an additional 2 minutes. Stir in garlic and cook for 1 to 2 minutes, occasionally stirring.
  • Combine flour with liquid until fully incorporated for about 2 minutes until thickened. Quickly stir in chicken broth, then add milk and cream, bring to a boil. Cover, reduce heat, and simmer for 5 minutes.
  • Uncover the pot and add chopped chicken, frozen peas, and Worcestershire sauce. Turn up the heat to medium, let it come to a boil, and simmer for about 5 minutes. Taste and adjust salt and pepper. If it's too thick, take it off the heat and let it finish cooking with the residual heat. Add milk or water, 1 tablespoon at a time, until it reaches your desired consistency.
  • To present, gently split a warm biscuit and arrange on a plate or in a bowl. Top generously with the savory chicken mixture and sprinkle with fresh parsley for an extra touch of flavor.
