Royal creamy one-pot chicken dinner ready in 30 minutes. Serve over pasta or rice to enjoy every drop of the delicious sauce.
Ingredients:
  • 500g Chicken Thighs, cut into 3 pieces
  • 1 small brown onion, finely chopped
  • 200g swiss brown mushrooms, quartered
  • 60g butter
  • 50g (1/3 cup) plain flour
  • 125.00 gm white wine
  • 250ml Liquid Stock Chicken Style
  • 300ml cooking cream
  • 250.00 ml frozen peas
  • 100g chargrilled capsicum, finely chopped
  • Cooked rice or fettuccini pasta, to serve
Instructions:
  • In a large, deep frying pan over medium-high heat, heat oil until sizzling. Add chicken and cook for 3-4 minutes until evenly browned. Transfer chicken to a plate.
  • Sauté onions in the pan until softened, for about 1-2 minutes. Then, add mushrooms and cook for an additional 2-3 minutes, stirring occasionally. Finally, transfer the mixture onto the plate with the chicken.
  • Melt butter in a pan until it foams. Add flour and stir to create a paste. Cook until golden for 1-2 minutes. Pour in wine and stock, whisking until smooth. Gradually whisk in cream per recipe notes. Return chicken, mushrooms, and peas to the pan. Simmer for 5 minutes, stirring occasionally. Finally, add capsicum, stir, and remove from heat.
  • Enjoy with your choice of cooked rice or fettuccine pasta.
