Creamy chicken skillet with peppers and mushrooms cooked in a rich sherry sauce.
Ingredients:
  • 1 green bell pepper, chopped
  • 1 cup sliced fresh mushrooms
  • 2 tablespoons all-purpose flour
  • 2.25 cups cooked, cubed chicken breast meat
  • 1 cup sour cream
  • 2 egg yolks
  • 1 pimento, chopped
  • 4 teaspoons cooking sherry
  • salt and pepper to taste
Instructions:
  • In a large skillet over medium-high heat, sizzle butter until melted. Sauté bell pepper and mushrooms until tender. Thicken with broth and flour, then add chicken to warm through. Remove from heat and enjoy!
  • Combine sour cream, egg yolks, pimento, sherry, salt, and pepper in a small bowl, stirring until well mixed. Add this creamy mixture to the chicken in the skillet. Heat thoroughly while stirring. Serve hot.
