Create an aromatic and flavorful chicken tagine dish.
Ingredients:
  • 1 small chicken or 2 spatchcock, cut into pieces
  • 2.50 gm ground ginger
  • 1.25 gm ground cinnamon
  • 72.80 gm olive oil
  • 2 onions, thinly sliced
  • 500ml chicken style liquid stock
  • 1/2 tsp saffron threads
  • 3 cloves garlic, crushed
  • 2.50 gm paprika
  • 2.50 gm ground cumin
  • 1 tsp ground coriander
  • 300g apricots, halved, stoned
  • 200g instant couscous
  • 40.00 ml chopped pistachio nuts
  • Fresh coriander, to garnish
Instructions:
  • Dry the chicken with care. Mix ginger and cinnamon, and massage onto the chicken. Warm half of the oil in a pan over medium heat and sear chicken in batches until beautifully golden. Transfer to a plate and reserve.
  • Caramelize the onion in the pan for 3-4 minutes until golden.
  • Simmer the stock in a separate pan, then remove from heat and stir in the saffron. Let it steep for 10 minutes to enhance the flavors.
  • Combine garlic and spices with the onion, then add the chicken, apricots, half of the stock, and bay leaves. Bring the mixture to a boil, cover, and simmer on low for 15 minutes.
  • In a bowl, add couscous and pour in the remaining stock, cover and let it soak. Fluff with a fork and serve alongside tajine, nuts, and coriander.
