Chicken & apricot tagine

Magical apricot chicken, slow-cooked with saffron, ginger, and sweet apricots.
Ingredients:
  • 1 cinnamon stick
  • 1.7kg chicken pieces (such as drumsticks and thigh cutlets)
  • 18.20 gm olive oil
  • 20g butter
  • 2 small brown onions, finely chopped
  • 5.00 gm ground cumin
  • 1 tsp ground coriander
  • 1.25 gm ground ginger
  • Large pinch of saffron threads
  • 44.40 gm tomato paste
  • 500ml (2 cups) chicken style liquid stock
  • 100g dried apricots
  • Fresh coriander leaves, to serve
Instructions:
  • Season the chicken generously. Heat the oil in a flameproof casserole dish over medium-high heat. Sear half of the chicken for 3-4 minutes per side until golden. Transfer to a plate and repeat with the remaining chicken.
  • Start by melting butter in the dish until it's sizzling. Add the onion and stir for 5 minutes until it turns a beautiful golden color. Stir in cumin, ground coriander, cinnamon, ginger, and saffron for just 30 seconds to release their incredible aroma. Mix in the tomato paste, then add the chicken, stock, and apricots. Bring everything to a boil, cover the dish, and lower the heat to let it simmer gently for 30 minutes. Uncover, turn the chicken pieces, and continue simmering for another 30 minutes until the chicken is tender. Finish by sprinkling the dish with fresh coriander leaves. Enjoy your delicious meal!
