Instant Pot® Chicken Tagine with Fresh Apricots: A modern twist on a Moroccan classic.
Ingredients:
  • 1 large onion, finely sliced
  • 1 (1 inch) piece fresh ginger, grated
  • 1 tablespoon butter
  • 1.5 teaspoons ground cinnamon
  • 1 teaspoon ground cumin
  • 1 pound skinless, boneless chicken thighs, cut into large chunks
  • 1 cup chicken broth
  • 1 cup chopped tomatoes
  • 6 fresh apricots, pitted and halved
  • 1 tablespoon honey
  • 3.5 ounces cooked Israeli couscous
Instructions:
  • Preheat your versatile multi-functional pressure cooker, like an Instant Pot®, by choosing the Saute function.
  • In a hot cooker, heat vegetable oil and saute onions for 3 minutes. Add garlic and ginger, saute for another 30 seconds until fragrant, then stir in butter.
  • Combine cinnamon and cumin in a small bowl. Set aside 1 teaspoon of the mixture. Season chicken thighs with the remaining mixture.
  • Heat chicken in Instant Pot® until golden, about 5 minutes each side. Add chicken broth and tomatoes. Seal the lid securely. Set to high pressure for 10 minutes based on instructions. Wait 10 to 15 minutes for pressure to build.
  • Follow the manufacturer's instructions to natural-release pressure for 15 minutes, then carefully quick-release remaining pressure for about 5 minutes before unlocking and removing the lid.
  • Add apricots to the liquid. Season chicken thighs with 1 teaspoon of the reserved cinnamon and cumin mixture. Drizzle honey over the chicken thighs. Serve on top of couscous with the tomato mixture.
